Breaking Down and Smoking Fish
The blue fish is a commonly caught fish in the waters off of Martha's Vineyard. In this class we will learn how to 1) break down a whole fish 2) brine and cure the fillets 3) ways to smoke the fish at home and what wood to use and 4) how to make a delicious smoked fish dip. All of these skills are great not just for blue fish but other fish caught in our waters.
We will also discuss the other type of fish that can be caught locally. Participants will also practice knife skills by gutting and filleting. We will also explore how to cut fish for sashimi and how to prepare a delicious crudo from the herbs and vegetables in our garden.
Our Monday culinary education programing will focus on the bounty of the season and the unique flavors of Martha's Vineyard. We will coordinate our classes with the growing seasons of our farm to highlight seasonal, sustainable and healthy food practices. Participants will learn new and exciting ways to source and prepare food. Space is limited for these hands-on meals, pre-registration is required.
