Fresh Pasta Class
In this class we will make a vegetable antipasto and two types of handmade pasta. We will explore the endless possibilities for delicious sauces and toppings. We will make hand cut pappardelle and ricotta gnocchi.
For our gnocchi we will use the whole borage plant. We will blanch, drain and sauté the leaves and incorporate them into our gnocchi. We will use the excess liquid to make a deeply herbaceous and savory brodo to serve them in. And we will garnish with the beautiful edible flowers.
For our pappardelle, we will make two preparations. One will be a seasonal vegetable medley with lemon zest, fresh herbs, parmesan and white wine. Second, we will make a lamb ragu with our farm raised ground lamb.
Our Monday culinary education programing will focus on the bounty of the season and the unique flavors of Martha's Vineyard. We will coordinate our classes with the growing seasons of our farm to highlight seasonal, sustainable and healthy food practices. Participants will learn new and exciting ways to source and prepare food. Space is limited for these hands-on meals, pre-registration is required.
